Yes, maltodextrin is gluten-free, even when made from wheat
Even when made from wheat, processing removes gluten to below 20 ppm, the legal gluten-free limit. In the US, wheat-based maltodextrin must still say "wheat" on the label.
The full answer
Maltodextrin is made by breaking starch into short sugar chains. In North America it's usually made from corn; in Europe it's often made from wheat. That's why people with celiac disease worry about it.
During production the starch is purified and broken down so thoroughly that the gluten proteins are removed. Wheat-based maltodextrin tests well under 20 parts per million of gluten, the legal limit for "gluten-free" in the US, Canada and EU. The EU explicitly exempts wheat-based glucose syrups and maltodextrins from allergen labeling for this reason.
In the US, though, the FDA still requires the word "wheat" on the label if the maltodextrin came from wheat. That can be confusing: a product may say "maltodextrin (wheat)" and still be certified gluten-free.
Celiac organizations including Beyond Celiac and Coeliac UK agree that maltodextrin is safe on a gluten-free diet. If you are extremely sensitive, look for a certified gluten-free logo, which also guarantees the factory controls cross-contamination.
What to look for on the label
- "Certified gluten-free" logo (GFCO, Coeliac UK crossed grain)
- "Maltodextrin (corn)" or "tapioca maltodextrin"
- "Maltodextrin (wheat)" is still under 20 ppm gluten
