Rules by country
Sorbitan monostearate is an approved emulsifier with category limits in the US, the EU and Canada. JECFA's group limit for sorbitan esters is 25 mg per kg of body weight. It is also the backbone chemists turn into polysorbate 60.
How much is too much? (Acceptable Daily Intake)
Based on 25 mg per kg of body weight (EFSA / JECFA). A 20 kg (44 lb) child: 500 mg a day.
What is it?
This is a mild emulsifier, less water-soluble than the polysorbates made from it. Yeast-raised bakery goods and dry whipped-topping powders are the usual places it shows up.
Where it comes from: Sorbitol is esterified with stearic acid to make sorbitan monostearate. Sorbitol usually comes from corn. Stearic acid may come from vegetable oil or from animal fat.
Why it’s in food
- Stabilizes cake crumb
- Helps dry whipped toppings
- Protects yeast doughs
- Carries flavors
