Low-FODMAPYes
The short answer
Brown sugar is white sugar plus molasses. It is not keto. It raises blood sugar about like table sugar. Vegans who avoid bone char need a beet brown sugar or a cane sugar that says it skipped that filter.

Safe in small amounts; may bother some people or raise blood sugar.

Brown sugar is a sugar food, not an E-number. The vegan question is the same bone-char question as other cane sugars: some US cane refineries filter syrup through burned animal bone. Beet sugar does not.

Daily limit: Experts haven’t set a number because normal food amounts are far below any level of concern.

What is it?

The molasses keeps the sugar soft and slightly acid, which is why cookies made with it spread and chew. If the bag dries out, a piece of bread in the jar puts the moisture back. The sugar underneath has not changed.

Where it comes from: American brown sugar is refined white sugar with molasses added back. Light brown has less molasses. Dark brown has more. It is still sucrose, plus the color and acid of the molasses.

Why it’s in food

  • Chews a cookie
  • Glazes a ham
  • Sweetens oatmeal
  • Feeds a barbecue sauce

Still sucroseConcern

Molasses changes the flavor and adds a little mineral color. It does not turn the spoonful into a whole food. The glycemic load is the sugar.

Bone charUnder study

Some cane refineries run the syrup through bone char. The char does not stay in the bag. People who avoid animal processing still skip that sugar.

What can I use instead?

Sucrose

Ratio: The white sugar underneath, without the molasses

Best for: Anything that should stay pale

Molasses

Ratio: The syrup that was added back, used by the spoon instead of the cup

Best for: Gingerbread

Why did my brown sugar turn into a rock?

The molasses dried out. Moisture softens it again. The sugar is still fine.

Is Brown sugar safe?

Use in moderation (62/100). Brown sugar is a sugar food, not an E-number. The vegan question is the same bone-char question as other cane sugars: some US cane refineries filter syrup through burned animal bone. Beet sugar does not.

Is Brown sugar vegan?

Depends. Brown sugar made from cane may have been filtered through bone char. Beet brown sugar is not.
