Garlic powder is a food, not an E-number. Drying does not remove the fructans that make garlic high FODMAP. A low-FODMAP diet treats the powder as garlic.

Daily limit: Experts haven’t set a number because normal food amounts are far below any level of concern.

What is it?

Processors dehydrate the cloves until they are brittle, then mill them. The powder clumps if it gets damp, which is why some jars add a starch. That starch is the only gluten question, and it is printed when it is used.

Where it comes from: Garlic powder is fresh garlic, sliced, dried and ground. The sharp bite mellows in the drying. Garlic salt is this powder mixed with table salt, and the jar is mostly salt.

Why it’s in food

  • Seasons a rub
  • Flavors a dough
  • Builds a dip
  • Replaces a clove in a dry mix

Health & gut impact

Fructans survive dryingConcern

The FODMAPs in garlic are carbohydrates in the clove. Removing the water concentrates them. A quarter teaspoon of powder is still garlic.
