Rules by country
Canthaxanthin is allowed only in limited foods and in animal feed. EFSA's daily limit is very low, 0.03 mg per kg of body weight, because high supplement doses have left crystals in the retina.
How much is too much? (Acceptable Daily Intake)
Based on 0.03 mg per kg of body weight (EFSA / JECFA). A 20 kg (44 lb) child: 0.6 mg a day.
What is it?
This carotenoid colors salmon flesh, egg yolks and a few sauces. The food use is measured in milligrams. The eye problem showed up in people taking canthaxanthin tanning pills, not in people eating salmon.
Where it comes from: Food canthaxanthin is usually synthesized to match the pigment flamingos and some mushrooms make. It is also fed to farmed salmon and egg-laying hens so flesh and yolks keep a set color.
Why it’s in food
- Colors farmed salmon
- Sets egg-yolk color
- Tints some sauces
- Was sold as a tanning pill

Health & gut impact
High doses of canthaxanthin, mostly from tanning pills, can leave golden crystals in the retina. That is why the daily limit is only 0.03 mg per kg.
EFSA opinion on canthaxanthin (2010)
